Cookie Butter (Lotus) Whoopie Pies
Recipe - Cookie Butter Whoopie Pies
For the cookies:
1 cup soy milk (or any non-dairy milk of your choice)
1 tsp vinegar
1 cup sugar
1/2 cup oil
1 tsp vanilla extract
2 cups flour
1/2 cup cocoa powder
2 tsp baking soda
1/2 tsp salt
For the cookie butter filling:
3/4 cup lotus spread
1 cup plus 2 Tbsp confectioners sugar
3 Tbsp butter or margarine
2-4 Tbsp soy milk
Pre-heat oven to 350F (180C).
In a liquid measuring cup mix soy milk with vinegar, set aside.
Whisk eggs and sugar in a large mixing bowl until frothy. Mix in oil and vanilla until combined.
Add flour, cocoa, baking soda and salt and mix well. Gradually pour in milk/vinegar mixture and fold to combine.
Line a baking sheet with parchment paper and scoop batter onto sheet using a medium cookie scoop (1.5 Tbsp) with about 2in in between each cookie.
Bake for 10-12 minutes until center is set and let cool on a cooling rack.
Prepare the filling: In a medium microwavable bowl melt butter/margarine. Add cookie butter spread, confectioners sugar and 1 Tbsp of soy milk. Mix well with a fork until all combined. Add the rest of the soy milk gradually until desired consistency is reached.
Assemble cookies: Match up the cookies so that they are paired with similar shapes. Spread about 2 Tbsp of filling on the flat side of one cookie and top with another. Continue with all the cookies and filling.
Make advance: Bake cookies up to 3 days in advance and store in a sealed container at room temperature. Prepare filling up to a week in advance and store in the fridge, bring to room temperature before assembling.
Holy Moly these whoopie pies were a big hit! I was having some friends over for kiddush a couple of weeks back and wanted to try out something new and fun. Was having a kind of creative block and was a bit bored of the usual.
So I was mindlessly scrolling through Facebook as we do when a notification popped up that I had some memories to look back on. Yesss! My fave FB distraction ever, you feel me?
So I immediately forget my predicament and scroll through adorable pics of my kids when they were young and still cute, and to my surprise the last memory on that day was this great status from 11 years ago:
And there it was, dessert inspiration in the most random of ways. So I quickly gathered the ingredients for 2 kinds of Whoopie pies and got to work. Cookie butter with chocolate because obviously. And then I tried out a funfetti one with cream cheese frosting, which in theory sounds good but my method wasn't ideal...
