Cheesecake Stuffed Chocolate Chip Cookies
It's 1 am and I'm still jet lagged. I actually love working at these weird hours when my whole house sleeps. But editing cookie pictures in the middle of the night can make a girl hungry, if you know what I mean.
Luckily the kids haven't gotten to these yet, so I may just finish them all before they wake up. Is that mean? It's my JOB to eat the cookies, right?!

Chewy #ChocolateChipCookies are my ultimate comfort food, but taking into a bite of one of these and getting that smooth, lightly sweetened mascarpone cheese surprise is like taking a bite of HEAVEN.
I'm super excited to bring you this recipe because Shavuot is a time for lots of indulgent cheesecakes and while they are always a favorite dessert of many, it can get a bit too decadent meal after meal (3 day yom tov this year!).
Enter: #Cheesecake Stuffed Cookies. They are the perfect small bite after a heavy dairy meal. Also the ideal breakfast treat together with a coffee on Yom Tov morning.
These freeze well so go ahead and whip up a huge batch of these today and try not to eat them all (I NEVER sneak from the freezer, why do you ask?) before the holiday!
Here I give you my favorite cookie recipe with pudding mix as the secret ingredient, but any chocolate chip cookie works, so feel free to use your go to cookie recipe. The cheesecake mixture is only 2 ingredients and you don't need a mixer, I repeat: no mixer necessary!! You're welcome.
The filling process is deceptively simple: flatten the dough, spoon the cheesecake mixture in the center of the dough, top with more cookie dough and roll to form a ball.
These cookies come together in minutes, including baking time, but your guests will be super impressed with the hidden cheesecake surprise, they'll never know how easy it was (until you share the recipe of course!).
Chocolate chip cookies
2/3 cup oil
1/4 cup sugar
3/4 cup brown sugar
1 pkg dry vanilla pudding mix
2 cups flour
1 tsp baking soda
1 tsp salt
1 cup mini chocolate chips
6oz (3/4 cup) Mascarpone cheese
1/4 cup powdered sugar
Pre-heat oven to 350.
In a large mixing bowl cream together oil and sugars. Add dry pudding mix and eggs and whisk until creamy.
Add flour, baking soda and salt gradually and mix with a fork or your hands until all incorporated.
Using your hands mix in chocolate chips. Set cookie dough aside.
In a small mixing bowl, mix together Mascarpone and powdered sugar with a fork. Mixing until smooth. If mixture is loose, refrigerate for 10 minutes, if not, continue right away.
*take about 1/2 a Tbsp of cookie dough and flatten with your hands
*spoon about 1 tsp of cheesecake mix onto the center of the cookie dough
*flatten another 1/2 a Tbsp of dough and top the cheese mixture
* round the edges and roll into a ball
*place on a baking sheet lined with parchment paper
Bake the cookies for 9-10 minutes. Allow to cool.
