Almond Praline Cookies for Passover

Almonds truly find their spotlight on Pesach. They are in a lot of dishes and especially desserts. I like to use them as part of a flour replacement because the flavor is not overpowering.

In this cookie we are using them in the form of slivered almonds which gives us the crunch that makes this cookie what it is.

I also use cinnamon in this recipe, and while it's a hit or miss flavor, you either LOVE it or HATE it, in these cookies the scent is not dominating and it adds the perfect touch of spice.

These taste amazing with a steaming cup of coffee and are perfect for a Passover morning.

I like to make a double (triple?!) batch of these at the start of Pesach and keep them on the counter for noshing... they're made from almonds so they're healthy right?



200g slivered almonds

1/4 cup sugar

1/2 tsp cinnamon

2 egg whites


Pre-heat oven to 325

In a medium sized mixing bowl mix all the ingredients together.

Spoon mixture in circles on to a parchment paper lined baking sheet.

Bake for 25 minutes until the cookies are golden brown.

Store in an airtight container on the counter for the whole week!
